- 2 heirloom tomatoes
- 6-8 mint leaves

- Oil a pan with avocado oil on medium heat.
- Place a quarter of a rice paper sheet in the pan until it puffs up (3 seconds) and remove from heat.
- Dice tomatoes, mince mint leaves, and place them in a bowl.
- Drizzle olive oil and fish sauce, stir, and serve on fried rice paper.
