Vietnamese Bruschetta

Ingredients

  • 2 heirloom tomatoes
  • 6-8 mint leaves
  • Olive oil
  • Fish sauce 
  • Rice paper 
  • Avocado oil 

Steps

  1. Oil a pan with avocado oil on medium heat.
  2. Place a quarter of a rice paper sheet in the pan until it puffs up (3 seconds) and remove from heat.
  3. Dice tomatoes, mince mint leaves, and place them in a bowl. 
  4. Drizzle olive oil and fish sauce, stir, and serve on fried rice paper.
